Sarah Wang: "From Meat to Greens: Transforming Taiwanese Diets for a Sustainable Future" - Summary: Discover the transformative strategies for shifting Taiwanese diets from meat-centric to plant-based, as Sarah Wang explores the synergy between cultural norms, legislation, and environmental advocacy. - Bio: Sarah J.M. Wang, MPH student, focuses on decarbonizing the food system and promoting plant-based diets. Former Vice Chair of the California Public Interest Group (CalPIRG) at the University of California. 2. Sappho Gilbert: "Modeling Nutrition Transitions at Both Poles: the Arctic & Madagascar" - Summary: Delve into the evolving dietary patterns and health impacts in the Canadian Arctic and Madagascar with Dr. Sappho Gilbert, as she addresses the challenges posed by nutrition transitions in these remote settings. - Bio: Dr. Sappho Gilbert, Postdoctoral Research Fellow at Harvard T.H. Chan School of Public Health, specializes in population nutrition and food security, with a focus on Indigenous health and climate change.
