FLP Cooking Class: German Spaetzle & Sauces with Barb Kempken

Spaetzle are short, irregularly shaped egg noodles with a chewy, dumpling-like texture. The name “spaetzle” is derived from the word spatz (“little sparrows”) but is also thought to mean “clump” in German. Served as a main dish or side, spaetzle can be made savory or sweet, but this class will feature savory preparations.
HUDS Director for Residential Dining Operations, Barb Kempken, will be leading this dynamic class where participants will learn how to make homemade spaetzle with two different types of flour, and prepare a variety of vegetarian sauces to pair with the noodles, including an arugula pesto and vegan “cheese” sauce.
